I'm Lori Burke, the Best-Selling author of
30 Delicious Refrigerator cakes. I have been an avid baker and cook my entire life.
I learned to cook from my Polish Dad and Italian Mom. We had some very
interesting meals in our home :) I married my college sweetheart and we have
two beautiful children. I'm a regular person who juggles work and family.
I LOVE to bake but often don't have time
for oven-baked cakes. Over the years I've collected some of the fast,
easy-to-make refrigerator cake recipes that I can whip together quickly when I
get home. My husband and kids love these tasty desserts. I finally decided to
put them all in a book. I really hope you like them :)

Quick Treats on the Run

Among the wonderful talents I inherited from my European grandparents, I did not obtain intuitive cooking skills. My mother can do wonders with a cup of cocoa, two eggs, flour, and an assortment of spices. I don't think she has looked at a recipe since she was 21. For the rest of us mortals, recipe collections are an essential component to feeding ourselves more than raw foods or burnt concoctions vaguely resembling something palatable. My highest praise is often reserved for illustrated volumes with straightforward instructions to create delicious, inspired meals which do not require a French sous-chef and a PhD in particle physics or mathematics to accomplish. There's an extra star for attempts to be healthy in an era of health consciousness, though I respect a dessert book may be challenged by keeping calories.
Refrigerator Cake Recipes fits the bill as a concise trove of opulent delectables that won't require some unusual techniques guaranteed to put terror into the hearts of aspiring bakers and cookers. Put down the blow torch, pick up a spatula, and head to the races. There are no hard to find ingredients that require a trip to a specialty shop for a tiny bottle of vintage pressed truffle oil that costs more than the rest of the cake combined. Intelligent, well-laid out recipes burst off the page to take your hunger by the horns. Imagination is sure to follow with ways to dress up good standbys. The tone is neither intimidating nor too basic for accomplished kitchenistas, and it strikes a nice balance on either end. I especially enjoy how many of these recipes can be dressed up or modified for taste, and not in a way that requires intense alteration or consideration. Chocolate cakes can be swirled and swizzled under raspberry syrups or a caramel sauce, but the trick of making a good foundation is laid out well in a series of delicious cakes.
The best part? You can stick them in the fridge. In my household, a cake which isn't hidden away or wrapped in nine layers of saran-wrap will be assaulted on all sides by hungry beau and roommate and friends. More to the point, my hectic schedule doesn't allow me to whip up a fluffy, moist cake an hour or two ahead of time. I may need to do it the night before and trust the cake will: a) survive, b) turn out okay, c) endure transportation between my house and the party event. If this sounds familiar, this book is a /godsend/ for cakes which hold up and in fact improve after some time chilling out beside the milk and the pickles.
Everyone in the house appreciated my first try, and little did they know I had trusty Frigidaire at my side. I'll be referring to this again for an upcoming birthday party, and I feel confident thanks to the good selection of recipes.
Do not come to this book hungry or you may be tempted to nosh on the batter. That's a dangerous distraction.

Nice resource

I was a little apprehensive when I saw this, because I'm not much for non-traditional cakes. But I was pleasantly surprised. There are several that have an interesting little twist that will make it better than just some frozen or chilled cake. The recipes are laid out in such a way that they also fill you with ideas on what you can do yourself just by substituting a few ingredients.
I thought the collection was a good one, and the instructions were simple enough where just about any cook could complete them with success.

Absolutely delicious...

I'll be the first to admit that I'm not the greatest cook in the world, but I do love to cook. Lori's book is the real deal. I've not only impressed myself, but my friends as well with her cake recipes (with no baking involved). These are definitely an excellent set of recipes that will join my growing repertoire of deserts.
